Made the day before Sirius' bdae which is on 1st of April...what a joke ahaha:)
Result:
-good sponge texture. corn starch helps made it fluffier although baking time should be reduced to less than 25 min)
-spongethoroughly soaked with maccha (middle layer sponge is coated on both sides)
-sweetness just nice but sirius do not really like the azuki red bean in it.
-Decoration cream is whipped just right...80% whipped made it easy to pipe.
-Strawberry glazed by using 50g of apricot jam dissolve in 1/2 tbsp of water and heated up.
-Add gelatin to heated up liquor to dissolve and add to zabaglione to give better, smoother mascaporne mousse texture
