Ingredients
egg 3 sugar 50g corn starch 1 tsp
flour 40g cream 1tbsp vanilla extract
1. Beat yolk with a handful of sugar till whitish, ribbon stage
2. Beat egg white to firm meringue ( hooked tip)
3. Add 1 tsp corn starch. Continue beating until it return to the firm meringue state
4. Add in egg yolk mixture to (3). Mix with 1 beater in a mtd
5. Add flour (sieved 3X) and baking powder. Fold gently
6. Pour mixture 15cm above the mold.
7. Even out the surface, tap the bottom of the mold to remove air bubble
8. Bake for 13 min (356F) then >1min (400F)
Result
-moist (even the next day)
- fluffy (not so fluffy the next day...incorporate vegetable oil)
